Recipe of the Week: Sweet Potato Porridge "Asaro"

Did you know: Sweet potatoes are high in vitamin A, vitamin B5, B6, thiamin, niacin, riboflavin, and, due to their orange color, are high in carotenoids. They also contain less calories than Irish potatoes.

‍Here's a recipe for a tasty sweet potato meal.



·      9 cups cubed sweet potatoes  
·      1/8th cup palm oil
·      4 cups of blended tomatoes, onions and red pepper
·      1 1/2 cup Meat stock
·      1 -2 cups water
·      3 tsp. curry powder
·      3 tsp. thyme
·      3-4 bay leafs
·      Maggi
·      Salt to taste



In a blender, combine tomatoes, onions and pepper and pulse till paste is formed.

In a separate pot, add in the palm oil, onions, bay leaf, thyme and curry

Add in tomato blend and allow to boil till tomato liquid reduces significantly.
Then add stock, potatoes and some water. Spice to taste. Allow to cook for about 10mins.

Add fish or shredded meat (optional) reduce heat to low and let simmer until the sweet potatoes are cooked and the sauce has been absorbed. Once the potatoes are ready, use the back of wooden spoon to mash it into gooey consistency.

And there you have it... sweet potato porridge at its best. 
Serve with spicy beef in a peppered sauce, chicken wings and some grilled plantain.
